Blueberry Banana Bread

 
 
Since I posted this picture on my facebook page I have had several people message me for the recipe  so here it is! I am going to make it with strawberry next time! Enjoy!!
 
 
Shopping List
 
1 stick of butter, melted and cooled
1/3 cup sugar
1/3 cup light brown sugar
2 eggs
5 ripe bananas, coarsely chopped
1/2 cup sweetened condensed milk
2 cups all-purpose flour
1 tsp. salt
2 tsp. baking powder
1 1/2 cups of blueberries
 
 
Preheat oven to 350 degrees.
 
Spray one standard loaf pan with cooking spray. ( I split the batter into 2 loaf pans )
 
Cream butter, 2 of the bananas and sugar in a large bowl using an electric mixer.
 
Mix in eggs.
 
Add remaining 3 bananas and sweetened condensed milk. DO NOT OVER-MIX!
 
In a separate bowl combine flour, salt and baking powder with a fork.
 
Fold the banana mixture into the bowl with the dry ingredient. DO NOT OVER-MIX! (It should be lumpy)
 
Fold in the blueberries. You can add nuts if you desire.
 
Pour batter into loaf pan.
 
Bake 55 to 60 minutes or until the toothpick test is clean.
 
Remove pan from oven and let bread rest IN THE PAN for 45 minutes.
 
Flip bread out of pan and ENJOY! (with butter on top and a cold glass of milk:)

ONE YEAR ANNIVERSARY

 
December 1st was our One year Anniversary! It's so crazy because it truly does not feel like it has been 1 Year! It has all gone so fast. We kicked around the idea of what to do for the big day and we decided that we will always go back to the place we were married on the day that we were married.
So...Texas it is! I thought I would make our trip extra special and book a two night stay at the historic Gaylord Texan Resort.
It was beautiful...but I probably will never do that again! Don't get me wrong it is a great place to go and visit but for the price it is waaaayyy over rated!! We got to share our romantic weekend with a bunch of screaming kids and people who would bump into you and look at you like it was your fault! The minute we drove up and the guy who was directing traffic told us it was a 40 minute wait for valet I knew we were at the wrong place. I know it was probably my fault for booking a hotel that is a tourist attraction during Christmas...but I had no clue! We parked our car and carried our bags about 1/2 mile to the door only to be greeted with screaming kids and tons of people...how romantic! I just kept thinking...this was my gift to Lonnie and it is horrible! After walking so far with our bags we found one of those bag carts and put our bags on it so that we could check in. That was until the bell boy told us it was $25.00 to rent it and they would bring it up to us ( which meant a tip ) ...did I mention how impressed I was!
One thing I have learned from my dear husband is that it is not where you are it is who you are with that matters. I get that but don't think the cost of the room per night kept racing through my head!
Ok enough of that rant...we check in and got to the room. It was OK. Nothing too special.

We dropped our bags, freshened up and headed downstairs.
The decorations were amazing! (and NO I am not being sarcastic)
They truly were.










They even had a real live drummer boy.
We headed to get a bite to each which was challenging because of the long lines but be decided on Mexican food. Now may I tell you that Lonnie and I love Mexican food...heck we were even married at Mexican food restaurant. This place was terrible...down to the margarita.
We then headed to a wine bar where we ordered 2 glasses of wine (which did not meet my pour standards) and 3 slices of cheese for the grand total of $90.00!
However they did have a Christmas tree idea that Lonnie and I are going to use next year! A tree made out of wine bottles...loved it!
We then went to our room and got the glasses that they give you for brushing your teeth and opened our own bottle of wine...(because I refused to pay that much money) and went to the lobby to people watch. I was totally into it...can you tell?
I'm sure you are asking...why didn't you just go somewhere else? Well we would have but we knew that we just wanted a drink and some food and every time that you leave the resort they bill your room for it! So...we stayed and made the most of it.
The next day we went back to the place we are always drawn to "The Stockyards"
We spent most of the day there.
Sunday was our actual anniversary and we went to have lunch at the same place we were married. It was awesome. We had our picture taken in the courtyard we were married in and plan to do that every year from now on.
Now this is Mexican food!

We always go to the "White Elephant" My picture is even on the wall there. LOL!


And we always run into "sleepy" ...
she always shines my boots when I'm in town.
Lonnie even did a little singing with the band at the wine bar.

In the end we had a great weekend. We learned that we will be staying in the "Stockyards" from now on and only visit the Gaylord Texan for the tourist attraction. Lonnie and I always have fun with what ever we do.. we love meeting people we will never see again and trying new things. One thing I do know is the love that this man has for me makes me one happy girl! Happy Anniversary Lonnie! I love you.

3rd Annual OU/TEAXS Trip

What a great weekend! Yes the Sooners lost, but time spent with family and friends makes up for that any day of the week. Lonnie and I have been going to Big D for the OU/Texas game for the past three years. We never actually attend the game which is kinda weird. We go to Humperdinks which is a great place to watch the game since 90% of the people who are there are OU fans. Even the wait staff wears Crimson and Cream. Mainly for the sake of good tips but I like being surrounded by our colors!

This year Kaleb, Kendra and Kate got to make the trip with us!
As for the boot on the tower of beer...Lonnie did that last year so why break the tradition lol! It was suppose to be the game changer, but that didn't happen. We lost and all I ended up with was a cold boot!
After the game we headed to the Fort Worth stockyards. We love that place...Lonnie and I even got married there! We had some amazing Mexican food at Los Vaquero. We can't go to the stockyards and not go back to eat at the place we were married at! I haven' been feeling well for the past week so Lonnie and I called it a early night and headed back to the motel while the kiddos partied like rock stars! Sunday was a different story though. I was bound and determined that I was going to have a fun day regardless of me not feeling well and we did just that. We started with a steak at Cattleman's. We laughed so hard we had tears in our eyes. It was awesome! We always have to get some kind of souvenir. Last year it was huge sombrero's and fake mustaches this year it was huge Hulk hand beer holders!
Another favorite place to go while at the stockyards is The White Elephant Bar. If you ever make it there you have to get the Banana Pudding Shot! Pretty tasty lil suckers!
We even think we found the next big band! They reminded us of The Pistol Annie's

Our new home.

Well here it is mid September and this is the first blog I have posted about our new home. Actually this is the first blog I've posted in a long time. We are in full swing at work and have been putting in 10 to 12 hour days. Oh well...We are blessed to be busy.
We had our home built this past year and even though it is all brand new there is still a lot of work that needs to be done. To save money I opted to paint all of the spare rooms, kitchen, laundry and our master bedroom and bath by myself!! Really not sure what I was thinking but as of now I have only managed to paint the laundry and the kitchen. Pictures of these rooms will have to come later for the simple fact that they are not 100% done!
Since we have had such a pleasant summer I have really focused on our yard. As you can see it really needed some personal attention!


I'm pretty good with having an idea of what I want something to look like. So we headed to the greenhouse. We got some amazing deals. We don't have a pick up so this is how we got to ride home with all of our new accessories.
With a little help from the neighbor and his lil tractor ( and Kloie)  and a lot of sweat and sore muscles we have a start to a great looking yard.
I'm liking the way things are coming along.
