Still Cooking! Kinda!

Ok I can say that I am still  on the cooking  Spree! My youngest son thinks he is the chef too. I can never make something that Kendall is willing to take part of! But today we had a cook off!

Cooking up a Storm!

I have had the pleasure of only having to work one day this week, and I am sure my husband is loving it! Why you ask? Because I have been cooking and baking like crazy! I really love to cook, but sometimes when I get off of work I just don't feel like trying to figure out a menu that everyone will eat, cook it and then clean up the mess. By the time that is all done guess what it's time for bed just so I can do it all over tomorrow. I think that is why I get in a menu rut. Sometimes it seems like I cook the same old things over and over again, because they are quick, easy and I know what they will taste like. Well needless to say this week has been a delicious exception!
I can't take all of the credit. Thank you to some of my bloggers that I follow for some great recipe's!
This was our meal Last Night. Mushroom and Onion Chicken Breast with Mushroom Rice and a Salad. Trust me the picture do not do the meals justice.
 This meal was my favorite so far. It is full of flavor. Boneless Pork Chops Smothered in a Gravy Sauce, Green Beans and Mashed Potatoes with the Pork Chop Gravy Sauce over it! Both of these are definitely keepers. Yum Yum.
On top of the cooking I decided to bake some Chocolate Chip Cookie today. I tried a new recipe, and they turn out pretty darn good if I do say so myself.
Here is the play by play.

2-1/4 cups all-purpose flour; 1 tsp baking soda; 1 tsp. salt; mix dry ingredients together in bowl.

In a separate bowl, combine by hand, 1cup of melted butter (cooled); 1 cup granulated sugar; 1/2 cup brown sugar.

Add to wet ingredients 2 eggs (slightly beaten) and 2 tsp of vanilla.

Add the flour mixture ( mix till combined ); Add choc. chips.

Dropped by spoonfuls 1-1/2 inches apart onto cookie sheet.

Bake at 375 degrees for 12 to 14 minutes.

And here ya go! Very Yummy!

Happy Tuesday everyone! I had a very relaxing but productive day.
 I had the day off at the Court House, but we had decided last week to take pictures for the Treasurer's Office. My boss, Penny has pictures in several different spots in the office, but they don't have any of the new employee's in them. And of course, me being a new employee (Well kinda, I've been there for 1 1/2 years) I just felt that Jennifer and I needed to be included in some photo's.
 Anyway I got up and was gung ho for my day until it was time to do my hair. I didn't have any more hair gel and I ran out of hairspray about 2 weeks ago! My hair is very thin and fine so it takes a lot of hair product to make my hair look good. After fighting it for about 45 min. I gave up and reached for the trusty hair clip! I had a plan for the way I wanted my hair to look and well, I didn't even get close today!
Regardless, I still made it for pictures!

These were just a few of my favorites.
We joke around a lot in this office and I love that because it can make a slow day go by a lot faster. We just couldn't resist taking a few fun pics!

I know that you have heard me say it before, but I love both of my jobs. I have two of the best bosses I could ask for. I have had several jobs and several bosses but only 3 bosses that I can think of have I truely enjoyed working for. The first would have to be Tammy Gray of Buda Drug Store in Buda Texas and the other two I am currently employeed with. Believe me it makes getting up and going to work a pleasure.
I also have the pleasure of working with 3 great co-workers. I don't really get to work with Jennifer all that much, but we get along well when we do get to work together. I know this sounds all gushy and full of bull, but IT IS THE TOTAL TRUTH! Even with all the drama that surrounds our small town government, both office's can seem to push that aside, get our jobs done and have fun doing it!

A weekend of R&R- Rain and Rodeo's

What a great weekend I had! We were able to get out of town for the night and spend it with my lil sis and her family and my cousins. My lil sis lives in Woodward and each year the Elks club puts on a awesome Rodeo.
 Sharla has ask us to go every year, so this year we decided what the heck.  Kaleb went to the Lake and Chris, Kendall and I headed to Woo Town. Kendra had to work until 5:00 so she was just going to meet us there.  I called Sharla to let her know that we were heading out and she said that it had been raining. Great I thought, this is a out door event.  As we were driving this is what we saw.
And this is what we had to drive through.
The rain finally let up and I just knew that it was gonna be muggy. But to my surprise when I got out of the car it was very mild outside. Thank you Lord!
After a few hours of family time it was time to get all dressed up! I love, love, love to get all dressed up. It was lots of fun because all of us girls got ready together in the same bathroom. I felt like we were back in high school again getting ready for a night out!

Then it was off to the Rodeo. It had already started when we got there and the grand stands we pretty much full so we found a good spot next to the areana. It did sprinkle on us pretty much the whole time but I brought my handy dandy umbrella

Then it was off to the Rodeo dance. We had a great time there as well. The band was The Jason Boland Band.
We ended our night with a late night meal.

HAPPY BIRTHDAY KENDALL

18 Years ago Today I gave Birth to a Beautiful 12 pound 1.2 oz. Baby Boy! Yes, I said 12 POUNDS! On July 20, 1992 at 10:00 P.M. I decided it was time to head to the hospital. Kendall was ready to make his debut. Needless to say I had no idea what I was in for. Don't get me wrong, I had been in Labor 2 times before so I knew all about that, but this Labor/Delivery was nothing like the other 2. The other 2 were a breeze compared to this one. Kendall really made me work for it, but it was worth every push.

As you can see he has grown up to be a very handsome young man.

Last night we went to our favorite restaurant to have Kendall's Birthday Dinner. Dinner was great, as always, and we were there with my cousins Rob & Heidi. The Birthday tradition at Los Potros is to bring you a dessert and sing you Happy Birthday then smear a spoonful of whipped cream in your face. Well we were done with dinner and ready to leave the restaurant and they still had not given Kendall his whipped cream. While we were paying out, Pedro came out of the  kitchen with a hat and a whole bottle of whipped cream.

And here is the result!

This morning Kendall woke up fairly early. He went up town and came home with a scratch off Lottery Ticket that he purchased all by himself.

He wasn't a winner, but he was legal!

Then it was time to get around and go to get his birthday gift. Many of you may not know, but Kendall was diagnosed with Type 1 Diabetes when he was 11 years old. It has been a struggle for many years. With the help from my Grandpa, Kendall was able to be put on a insulin pump a little over a year ago. Kendall's Sugar Levels have never been as good as they are now. For the past few years Kendall has been wanting a tattoo. I saw a waiter in a restaurant with a tattoo of the medical symbol and asked him about it. He said that he was Type 1 Diabetic and didn't like to wear the jewelry so he just had it tattooed on his arm. I thought that was really cool and told Kendall about it. It took him a while but he began drawing a design.

I approved of the design.

Anyway I told him that I would get him the tattoo for his birthday. So Kendall made the appointment and we were to be there today at 12:00 P.M. I have never been at a tattoo parlor before and could not imagine what I was in for, but the guys that worked there were so fun. They were cracking jokes and somehow put me at ease. It was very clean there too. When the guy that was working the front counter left to go pick up lunch, he put plastic bags over the phones so that the 2 guys that were doing the tattooing could answer the phones without contaminating them . I was very impressed.

And here is the finished product. I think it is pretty cool.

Sheriff is on the Run

As many of you know, I work in two different offices at the County Court House. I truly do love both of my jobs. Both offices that I work in have a Panic Button that sends a signal to the Sheriff's Office which is next door to the Court House. In the 1 1/2 years that I have been working there I have never had to push that button and I pray to God that I never do.
Friday while at work my boss was on the phone and I was just doing the usual work for the day at my desk, when all of a sudden the door opened quickly and in pops the Sheriff! I looked up and he appeared to be somewhat winded. I said "Hi Sheriff." He said "Is there a problem?" I am totally confused at this point and start looking around the office trying to figure out what he is talking about. He then replies, "The Panic Button went off for this office!" Really, I'm thinking. Why? Then I notice it! It was me. I had accidentally bumped up against it! WHOOPS! I felt like such a dork! I apologized several times and the Sheriff accepted my apology with a smile saying, "It's ok, it keeps me on my toe's!"
This morning at work he pops in the office again. I'm thinking, Did I Do It Again? He said no everything was fine he just wanted to let me know that some baked goods would be a nice apology gesture. I totally agreed, so Sheriff, here's to you! THANK YOU FOR BEING THERE EVEN IF IT IS A FALSE ALARM!

Bargin Shopping

This weekend was another great weekend spent with family and friends. Friday night we went to dinner in Caldwell Kansas with Steve and Deana Kilian. Deana is one of my bosses at the Court House and we have become good friends. It was a good evening. Thanks Steve and Deana!
Saturday we went to Blackwell to eat, you know where! Los Potros. We did some shopping at Wal-mart for just the regular household items. While shopping I found some dresses for my little cousins for $5.00.

Saturday evening we had a group of people over to swim in the pool and play pool pong. The pool was very relaxing after a hot day.
Sunday Kendall was still out of town at a friends house, so Chris, Kaleb and I went to Enid and met Kendra for lunch.

Here is just a sneak peak of our lunchen. Yes they are both on there cell phone either checking facebook or texting someone. No, really, we had a good dinner I just thought this was a funny picture.
After lunch Chris and Kaleb went on home and Kendra and I went shopping. We both love to shop but we are all about finding a bargin. We went to Ross first but came out empty handed. Our second stop was Old Navy! That's where we hit the Mother Load!
Everything that you see laid out on my bed is everthing that we bought and we didn't spend over 97 cents for each item! Now that's what I call a Bargin.

Happy Birthday Sister

Today is a day that I have celebrated since the day I was born! Today is my big sister's birthday!
HAPPY BIRTHDAY TINA!
I could never show you or say in words how much I Love You, and how much you have meant to me. I have always looked up to you. You are beautiful, funny, trusting, and to tell you the truth I could go on. I  remember you mothering me when I was little. Reading stories to me even though you really couldn't read yet. 
I know that there has been some not so good times. I remember when we were both cheerleaders and we were practicing for a pep rally and we got in a fight and ended up in a fist fight on the gym floor. Ha Ha I still laugh when I think of that!
You have been a rock for me when I have need you. You were the first one that I ran to when I needed advice when I was 18 and pregnant. You are the one I call when I need reassurance. 
I just want you to know that I Love You and I have loved having you as a big sister!

Family, Fireworks, and Turtle Races

Man oh man, this weekend has been packed full of fun. My B.I.L Ray, ( my little sister's hubs) has been working in Lamont, which is only 15-20 min. from our house. Since he had to work on Sat. my little sis decided to come for a visit. I have 2 sister's and we all live in the great state of Oklahoma, but we all live a few hours apart, so we don't get to see each other as much as I would like. My goal is to visit them more now that I don't have any more kiddo's in High School. I know how hard it is when you have 3 kiddo's going 3 different directions, so now that I have more free weekends I plan on doing the visiting.


Medford did not do a fireworks show on the 4th, which ended up being a good idea considering all of the rain that we got over the holiday weekend. So Friday nite was the big celebration. The evening started off with the annual Turtle races. If you have never seen a Turtle race, they can be somewhat entertaining. Of course my Lil Cousin's each had a turtle. The girls decorated their initial with bows and jewels and Heidi and I super glued them to the turtles shells.


Then it was off to the races! When we got there we had to get the Turtle's registered. I believe that there were over 50 turtle's entered. What a lot of competition!

After the races we all just kinda hung out and waited for the fireworks show. Heidi and I drove the girls down to the pond on the golf course so they could release a water turtle that they caught for a back up.
